All of our beef is processed at Mary’s Valley Meat Processing in Steelville, MO — a USDA-inspected facility we’ve come to know and trust. Their team handles our beef with the same care we put into raising it: dry-aged for tenderness and flavor, custom cut to each customer’s sheet, and packaged for the freezer.

USDA inspection means every animal is checked before and after harvest, every cut is traceable, and every package meets federal food-safety standards. It’s one more layer of confidence between our pasture and your plate.
